Matzo Ball Soup

Can you believe Passover is almost over? We've got a few more days, and I'm pulling out my matzo ball soup to finish off the last couple of nights.


So here's something a lot of people don't know: I hate soup. As a kid, I refused. My mom, my grandmother, my mutsi - they all tried to get me to eat soup. But here I am, many years later, obsessed with soup.


My mom and I probably have a conversation about soup once a month. And here's the thing we have both decided on: I don't hate soup - I hate canned soup. That's all my family made when I was little, and as I got older, the thought of soup just disgusted me.


Skip ahead many, many, many years - and my "Jewish Little Sister" decided she didn't like the fact that I didn't like soup. So, we made matzo ball soup in her kitchen, and I liked it. At that moment, I decided I needed to experiment. I didn't want to just have the matzo balls; I wanted the chicken too.


The following Passover for our friend's seder, I made the matzo ball soup! I love matzo ball soup so much now that I make it year-round.


So, here's my recipe - I hope you'll enjoy it. When it's not Passover, just add some bowtie pasta in too to make even more. It's so delicious! And keep an eye out for the video of me making this today!
