Sesame Diamond Cookies

These Sesame Diamond Cookies will be the star of your Seder!

Every year for Passover, my grandma will line up her cookies for the holiday and her house would be impossible to be in - all you wanted to do is eat these cookies, and these were always my favorite.


The robust nutty flavor of the sesame seeds, balanced with the sweetness of honey is addicting. Try it out this year, recipe to follow:


Diamond Sesame Cookies 1 cup honey 1 cup sugar 2 lbs natural sesame seeds


In a large pot, mix honey and sugar until melted. Bring to a bubbly boil and lower the flame.

Add sesame seeds to the pot and mix frequently: seeds need to be golden brown, but not to burn. Mix for 15-20 minutes, depending on flame.


Line parchment paper on your work station and transfer mixture to the work surface. Using a spatula or wet hands, pat the mixture to create a rectangle/oval shape, 1/2 inch thick. Move quickly - even though it is hot, when cooled it will be impossible to work with!


Cut the mixture in crisscross lines to create diamond shape - you are welcome to create other shapes if you desire: just make sure to work with the mixture hot. Let the cookies cool down at room temperature, until hardened.
